Filet Crostini with Grenadine Red Onion Jam & Gorgonzola
Grenadine Red Onion Jam
1 Large Red Onion, finely diced
1 Bottle of Grenadine
- Place onions and grenadine in a saucepan on medium to high heat.
- Bring to a boil and reduce to a simmer.
- Cook until the grenadine blends into the onion and is the consistency of a jam.
- Remove from stove, cool, and use immediately.
Filet Crostini w/ Grenadine Onion Jam & Gorgonzola
24 Crostini Slices
2 1/4 Pounds Cooked Filet Mignon Slices 1/3 Cup Grenadine Red Onion Jam
1 Cup Gorgonzola
1/4 Cup Chives, cut fine
Yield: 24 crostinis, 8 servings
- Place a filet slice on each crostini.
- Add spread of the grenadine onion jam on top of the filet.
- Add crumbles of gorgonzola to crostini and garnish with chives.
