Kettle Chips with Sweet Onion Dip

Kettle Chips

2 lbs. Russet Potatoes
6- 8 Cups Oil (for frying)

  1. Wash potatoes. Thinly slice the potatoes using a mandolin, knife, or food processor, add them into a bowl of cold water.
  2. Heat oil to 350 degrees.
  3. Rinse potatoes, drain, and place slices on a towel to dry.
  4. Place a handful of the slices safely into the oil and fry until golden. Place onto a paper towel lined cookie sheet.
  5. Season immediately.

 

Sweet Onion Dip

1 lb. Sour Cream
1 Sweet Onion, diced
2 Green Onions, thinly sliced
1 tsp. Worcestershire Sauce
1/2 Cup Horseradish
4 tsp. Dijon Mustard
1/2 tsp. Salt
1/2 tsp. Black Pepper
2 Cloves of Garlic, minced
Yield: 16 ounces

  1. Caramelize onions until they are light brown in color.
  2. Add the garlic and cook for an additional 3 minutes.
  3. Take off the heat and allow to cool.
  4. Add the other ingredients and mix well.
  5. Let the dip sit in the refrigerator overnight for optimal flavor.
