Sauce, Storage, and Success: The Cambro Touch in The Old Spaghetti Factory’s Transformation

For more than 50 years, The Old Spaghetti Factory has been serving Italian favorites like their famous mizithra pasta and lasagna. Family-owned and operated, The Old Spaghetti Factory has grown to more than 40 locations across 13 states, plus two restaurants in Nagoya and Kobe, Japan. For the last 10 years, The Old Spaghetti Factory has used our High Heat H-Pans™ to store and heat their sauce, lasagna and pasta. With a name like “The Old Spaghetti Factory,” you can imagine just how much sauce and lasagna their restaurants must go through each day.

High Heat H-Pans

“We will make about 40 gallons of sauce and then we portion those into the Cambro pans and then they go right on the cart. We let them cool down for a period of time before we take them to the walk-in. It’ll sit overnight, then we put the lids on them the next day and then they go on the shelves,” said Brian Sullivan, Director of Kitchen Operations at the Old Spaghetti Factory. 

 

Besides their H-Pans, there are two important pieces of equipment for the Old Spaghetti Factory to work like a well-oiled machine. 

Shelving

After The Old Spaghetti Factory cools its sauce, it stores H-Pans on shelving. While sauce tastes light as a feather when it’s covering your ravioli, hundreds of pans of it become very heavy.

 

“What happened is if [the old shelves] don’t have a brace on the bottom…because we load them up with sauce, they’ll break after a while and so then you lose all that sauce,” said Sullivan.

 

When The Old Spaghetti Factory needed new shelving, they decided to try Camshelving Elements XTRA Series. With the ability to hold 2,400 lbs. per unit up to 60”, Elements XTRA can handle the weight that The Old Spaghetti Factory requires. Plus, Camshelving is designed with optional dunnage stand accessories that add an increased weight bearing on bottom shelves.

While their new shelving is a similar design and size, Elements XTRA is still able to provide more storage space.

 

“The new racks fit better; it lays flat versus the [old] shelving. The [old shelving] doesn’t lay flat, it’s thinner material, so it weighs a little bit. If you don’t have product on there, it doesn’t snap together efficiently,” said John Malosh, Vice President of Development at The Old Spaghetti Factory.

 

“The old [shelves] have the angles on the shelving, so you lose a couple of inches on the top,” said Sullivan. “[The Cambro shelve plates] snap down a little bit, you have almost 100% usage.”

Food Pan Carts

Previously, The Old Spaghetti Factory was using aluminum carts that were bulky, not very easy to move around and had Food Pan Trolley with High Heat H-Panswide shelves that could only fit 24 pans on each cart.

 

When they started using the Camshelving® Food Pan Trolley, they realized they could fit 34 pans; a 41% increase compared to their previous carts.

 

Not only do Food Pan Trollies increase capacity without taking up more space, but they’re also less expensive than The Old Spaghetti Factory’s previous carts.
