Cambro’s Business of the Week: 831 Catering

831 Catering is a testament to adaptability in theAppetizer foodservice industry. Born as a restaurant in 2018, owner Joseph Talley swiftly adjusted during the uncertain times of 2020 by transforming into a catering business. 

831 Catering offers full-scale, staffed catering events for up to 1,000 guests and a complete line of packaged meals for office meetings and delivery needs. Now, 4 years later, Talley is thrilled to open another iteration of his business: 831 Beach Kitchen. The new cafe opened in late February 2024, serving breakfast and lunch in Monterey, Calif.

What inspired you to get into foodservice?

“I started in foodservice when I was 11 years old washing dishes at a family friend’s pizzeria. I’ve been in the business pretty much ever since.”

What do you love about your business?

“What I love about 831 Catering is meeting different people at events up and down the state of California. Weddings, corporate events, family gatherings–they all bring different walks of life, and we get to meet all different types of people.”

What’s the most interesting thing to happen to your business?

“I started the business in my garage. I didn’t know where it was going to go, but I just knew it needed to be done. We’ve grown to a larger business and it’s amazing to see what happens when you just keep putting one foot in front of the other.”

What is the biggest challenge you’ve had to overcome?

“Being in the hospitality industry in California during 2020 and surviving.”

Which Cambro products help make your business work?

“All of them! But for real, we use a lot of Cambro products, from containers to travel boxes. The most used are the lightweight Hot Boxes; we use them for cold travel and hot travel. They work great for us for offsite events because we will use them as cold boxes on the way there for storage. Once we are at the event, we cook the products and put them back into the boxes as hot boxes and hold the food hot for the event. We have about 20 of these boxes and we wouldn’t be able to do what we do without them.”
